Spiced Apple Porridge

with honey and coconut yoghurt

There aren’t many things more cosy than a warming bowl of porridge for breakfast, and this spiced, chia seed version with crisp apples and creamy coconut yoghurt is no different. We’ll be making this one on repeat all winter!

Ingredients

  • 180g steel cut/old-fashioned thick Scottish oats

  • 45g chia seeds

  • 1 ½ tsp ground cinnamon

  • ½ tsp ground ginger

  • ¼ tsp ground nutmeg

  • 2 apples, 1 grated and 1 thinly sliced

  • 2 tbsp honey, plus extra for drizzling

  • 875ml milk [dairy or dairy-free]

  • Thick coconut yoghurt, to serve

Method

  1. In a large pan combine the oats, chia seeds, cinnamon, ginger, nutmeg, grated apple, honey and milk.

  2. Cook on low heat stirring every few minutes until the mixture becomes thick and creamy. This should take approx. 10-12 minutes. Add some extra milk should you want a thinner consistency.

  3. Serve with coconut yoghurt, sliced apple, a drizzle of honey and a pinch of cinnamon. Enjoy!
