Ice Cream Cookie Sandwiches

Jokes aside, when the temperature rockets these are all I want to eat! To be honest with you, the cookies are pretty great on their own, but we highly recommended adding a scoop of your fave flavoured ice-cream for the ultimate sweet sandwich!
Ingredients
190g plain flour
60g oats
1 tsp of baking powder
1 tsp of vanilla extract
Pinch of salt
60ml vegetable oil
95g smooth apple sauce
65g light brown or coconut sugar
60g dark chocolate chips
6 scoops of ice cream of choice
Method
Begin by preheating the oven to 180c and lining two baking trays with parchment paper.
In a large bowl combine the vanilla extract, vegetable oil, apple sauce and sugar.
Next add the flour, oats, baking powder, salt and 50g of the chocolate chips. Should the mixture be too dry depending on the brand of apple sauce used, add a glug of milk of choice until the dough completely comes together.
Combine well and using a spoon, spoon out 12 balls of dough. Flatten slightly and push the remaining chocolate chips into the top.
Bake for 15 minutes. Allow to cool completely before adding a scoop of ice cream between 2 cookies. Repeat with all the cookies and eat immediately.
