Granola Clusters

with raisins and almond butter

Can we all agree that one of the best parts about making your own granola is getting those big old chunks that for some reason make eating the granola so much more enjoyable?

This recipe celebrates those chunks! Just one big batch of granola clusters that you can add to a bowl with your favourite milk [fridge cold please!] or just to snack on straight from the jar.

Ingredients

  • 75ml maple syrup

  • 100g almond butter

  • 30ml melted coconut oil

  • 160g porridge oats

  • 50g flaked almonds

  • 50g raisins

  • 40g sunflower seeds

  • ½ tsp ground cinnamon

Method

  1. Begin by preheating the oven to 150ºc.

  2. In a bowl combine all the wet ingredients, before adding all the dry and combining well.

  3. Empty onto a lined baking tray and push down firmly, ensuring the granola is joined in one big piece - this will ensure you get the clusters we’re after.

  4. Bake in the oven for 22-25 minutes [keep an eye on it to make sure the raisins don’t burn), rotating the tray halfway through.

  5. Allow the granola to cool completely, before breaking it into chunks. Store in an airtight container and consume within 7 days. Enjoy!
