Curried Chickpea Sandwich

If you’re not already adding smashed chickpeas to your sandwiches then this sandwich could be game changer!

There are lots of recipes that add capers to the chickpeas to recreate the classic tuna mayo sandwich, but this version is a little different. We love the warmth the curry powder adds instead. The tomato and spinach keep things fresh and we make sure to keep some of the chickpeas whole so that there’s a bit more texture! No sad sandwiches here…

Ingredients

  • 1 tin of chickpeas, drained and rinsed

  • 1 tsp of mild curry powder

  • 1 tbsp of fresh chives, chopped

  • 2 spring onions, sliced

  • 1 tbsp of mayo [dairy or dairy-free]

  • 4 slices of wholemeal bread

  • Handful of spinach

  • 1 large tomato, thinly sliced

Method

  1. Begin by placing the chickpeas in a bowl along with the curry powder, chopped chives, spring onions, and mayo. Season to taste with salt and pepper and then, using a fork, mash approximately half of the chickpeas and combine. We want it to be a little chunky and not all mashed!

  2. Load two slices of bread with spinach leaves, then add the curried chickpeas and sliced tomato. Place the other slices of bread on top, slice the sandwiches in half and enjoy!
