Chilli, Chocolate, & Black Bean Brownies

Did you know black beans AND dark chocolate are a source of iron and magnesium?

Did you also know they work incredibly well together to make a brownie? If you didn’t trust me, you need to try this recipe for yourself.

Ingredients

  • 1 tin of black beans, drained and rinsed

  • 2 medium eggs*

  • 1 tbsp vanilla extract

  • 260ml milk [dairy or dairy-free, at room temperature or warm]

  • 100g melted chilli chocolate

  • 200g plain flour

  • 100g light brown sugar

  • 45g cacao powder

  • 100g dark chocolate chunks [can be chilli flavoured too for an extra kick]

*Should you wish for the brownies to be vegan swap the eggs for 1 chia egg plus add an extra 40ml of milk to the mixture. Make the chia egg by combining 1 tablespoon of chia seeds and 2 tablespoons of water. Leave to sit for 3 minutes before adding to the mixture. 

Method

  1. Preheat the oven to 180ºc grease or line a rectangular baking tray.

  2. In a bowl mash the black beans and then combine with the eggs, vanilla extract, milk and melted chocolate. 

  3. Then add the flour, sugar, cacao powder and ½ of the chocolate chunks.

  4. Combine and empty the mixture into the baking tray and then top with the remaining chocolate chunks.

  5. Bake in the oven for 25 minutes and allow to cool for 10 minutes before removing from the tray and slicing into squares.

Makes approx. 12.
