This one’s no different and celebrates one of the best British summer fruits. If you’re packing this for lunch or a picnic, be sure to hold off the dressing until just before eating!
Strawberry Summer SaladPrint This
- 70g chopped spinach
- 250g cooked mixed quinoa
- ½ red onion, finely diced
- 60g chopped pecans
- 1 avocado, cut into chunks
- 125g strawberries, chopped
- 120g feta, cut into small chunks
- Handful of fresh basil, chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp balsamic vinegar
- ½ tsp sea salt flakes
Instructions In a bowl add the chopped spinach, cooked quinoa, red onion, pecans, avocado strawberries, feta, and basil.
 In a separate small bowl combine the olive oil, balsamic vinegar, and salt. Pour over the salad ingredients and gently mix until well combined. Serve and enjoy in the sunshine!
