Pancakes…but make them Christmasy! This is honestly the recipe to answer all your December breakfast dreams! Make your own mincemeat if you fancy, but shop brought is just as good and available in most supermarkets.

- 120g plain flour
- 70g oat flour [blend oats in a food processor]
- 1 tsp baking powder
- 20g ground flaxseed
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 250ml milk [dairy or dairy-free]
- 30ml maple syrup
- 8 tbsp mincemeat
- yoghurt [dairy or dairy-free], to serve
- orange zest, to serve
 Begin by heating a large non-stick pan on a medium heat with a little oil of choice.
 In a large bowl, combine the plain flour, oat flour, baking powder, ground flaxseed, and cinnamon.
 Next, add the vanilla extract, milk, and maple syrup. Combine and leave to sit for a couple of minutes.
 Add 3/4 of a tablespoon of the pancake mix into the hot pan, then add approximately 3/4 teaspoons of mincemeat to the centre, followed by 1/2 tablespoon of pancake mix over the top to cover the mincemeat.
 Cook for a couple of minutes or until bubbles show on the surface and the underneath is golden before very carefully flipping the pancake over. Cook for a couple of minutes on this side too, until golden.
 Repeat with the rest of the mixture before stacking on plates and adding yoghurt and orange zest on top to serve. Enjoy!
