Turning Lunch Box Club into Breakfast Box Club this week with these delicious little bars. They look a little like flapjacks but are much more nutritious. Filled with lots of warming, autumnal spices plus chunks of sweet apple and raisins. We like to serve them with creamy yoghurt and fresh berries for tasty breakfast or snack!
Apple & Raisin Breakfast Bars

- 260g oats
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp ground ginger
- 1/4 tsp ground nutmeg
- 200g smooth apple sauce
- 150ml milk [dairy or dairy-free]
- 45ml maple syrup or honey
- 1 apple, core removed and chopped into small chunks
- 60g raisins or sultanas
- TO SERVE
- Yoghurt [dairy or dairy-free]
- Fresh blueberries
Instructions
[1] Preheat the oven to 180ºc and line a rectangular baking tin with parchment paper
[2] In a large bowl combine the oats, baking powder, cinnamon, cloves, ginger, and nutmeg
[3] Add the apple sauce, milk, and maple syrup/honey and combine before adding 3/4 of the apple chunks and raisins, folding them evenly throughout the mixture
[4] Empty the mixture into the baking tin and flatten into the corners
[5] Top with the remaining apple chunks and raisins, pushing them in slightly before placing the tin into the oven for 25 minutes
[6] Allow to cook for 5 minutes before slicing and serving with yoghurt and blueberries. Enjoy!
