Why have regular hummus on toast when you can make pea hummus on toast!? Granted we love hummus like the next person, but the sweetness of the peas works so well in this recipe as well as boosting our vegetable intake for the day. The salty feta and peppery radish are the perfect pairing to top it off!

- 250g hummus
- 140g fresh or frozen peas
- 1/2 lemon, juiced
- 8 radishes, sliced
- 120g feta cheese, crumbled [dairy or dairy-free]
- 4 slices of wholemeal bread [or favourite bread of choice]
- Pinch of pepper
- Handful of mint leaves
 Begin by heating a pan of water on a medium heat. Once it’s boiling, add the peas and cook for just a few minutes and then drain.
 Add the peas to a blender along with the hummus and lemon juice and blend until the hummus turns a vibrant green colour.
 Lightly toast the bread and then load the hummus on top.
 Season with pepper, before adding the crumbled feta and sliced radishes. Top with some fresh mint leaves and enjoy!
