Mixing fruit into savoury salads can be pretty divisive can’t it? But actually, it’s the combination of sweet strawberries, salty feta, and creamy avocado that makes this salad so delicious. It’s got chunks of sweet potato to make it hearty and fresh tomatoes because well what’s a summer salad without tomatoes!? Strawberry, feta, and avocado saladPrint This
- 400g sweet potato, cut into chunks
- 3 tbsp of extra virgin olive oil
- 1/2 red onion, sliced
- 1 small avocado, sliced
- 15 mixed colour cherry tomatoes, halved
- 3 handfuls of spinach leaves
- 100g feta cheese, crumbled
- 15 strawberries, halved
- 1 lime, juiced
- FOR THE VINAIGRETTE
- 1/2 lime, zest
- Pinch of salt
- Pinch of pepper
- 1 tbsp of white wine vinegar
- 1 tsp of maple syrup
 Begin by preheating the oven to 180ºc and scattering the sweet potato chunks onto a baking tray. Drizzle over 1 tablespoon of oil and place into the oven to roast for 25 minutes.
 Meanwhile prepare the lime vinaigrette by combining the lime juice and zest with the remaining olive oil, white wine vinegar and maple syrup. Season with salt and pepper and combine.
 Once the sweet potato chunks are cooked combine in a bowl with the sliced red onion, avocado, cherry tomatoes and strawberries.
 Line the lunchboxes with spinach and then top with the sweet potato mix.
 Crumble the feta and drizzle over the vinaigrette. Top with any remaining lime zest should you wish. Enjoy!
