If you’ve been here before, you’ll know that the [delicious] baked oats breakfast has also been here before. Well it’s back again this week for several reasons:
1️⃣ they taste SO good
2️⃣ they travel SO well
3️⃣ the variations are pretty much endless
4️⃣ sometimes it feels like you’re eating cake for breakfast
5️⃣ they can also double up as a mid morning or mid afternoon snack
We’re adding chocolate to the mix this week before topping with crunchy walnuts and sliced banana to make regular weekday mornings a little more exciting! Serve with yoghurt and/or fresh fruit for a tasty on-the-go breakfast.
Chocolate baked banana oats

- 180g porridge oats
- 2 bananas
- 320ml milk [dairy or dairy-free]
- 30g cacao powder
- 1/2 tsp baking powder
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
- 45g protein powder [optional]
- 60g dark chocolate chips
- 40g chopped hazelnuts or walnuts
Instructions
[1] Begin by preheating the oven to 180ºc.
[2] In a bowl, mash 1 of the banana and add the porridge oats, milk, cacao powder, baking powder, cinnamon, vanilla extract, and protein powder, if using. [If you are using protein powder, you may need a little extra glug of milk].
[3] Next, add half of the chocolate chips and nuts and fold them through the mixture.
[4] Empty the mixture into an ovenproof dish. Slice the other banana and add to the top of the oat mixture with the remaining chocolate chips and nuts.
[5] Bake in the oven for 25-30 minutes. Allow to cool slightly before splitting between your lunch boxes. Serve with yoghurt and berries or other fresh fruit, if you like. Enjoy!
