The perfect salad making the most of autumn deliciousness! This salad has everything you need, hearty bulgur wheat (which can be swapped out for another grain of choice such as quinoa or couscous, if you like), crisp apples, and salty feta cheese. So fresh and delicious!
Autumnal salad

- 150g bulgar wheat
- 1/2 vegetable stock cube
- 60g pecans
- 1 apple
- 1 handful dried cranberries
- 120g feta cheese (or dairy-free alternative)
- Mixed salad leaves
- FOR THE VINAIGRETTE:
- 3 1/2 tbsp extra virgin olive oil
- 1/4 tsp salt
- 1/2 garlic clove, crushed
- 2 pinches black pepper
- Juice from 1/2 lemon
Instructions
First, add the dried bulgur wheat to a bowl and crumble the vegetable stock 1/3 on top. Cover with boiling water and give it a stir before leaving to one side.
Meanwhile, preheat the oven to 180c and scatter the pecans on a baking tray. Place in the oven to toast for 8 minutes.
Next make your vinaigrette by combining all of the ingredients together. If you want to pre-slice the apple cover with lemon juice from the remaining half a lemon to keep it from going brown.
Line your lunch boxes with the salad leaves, then add the bulgur wheat, diced feta cheese, toasted pecans, apple slices (if preparing in advance), and dried cranberries. Dress with the vinaigrette just before eating. Enjoy!
