If you’ve got some browning bananas in your fruit bowl but don’t quite fancy baking a banana bread, this is the recipe for you! Mash them up, mix with oats, cinnamon, and your favourite nut butter and you’re well on your way to a delicious snack. These little bars could make a great addition to a bowl of yogurt for breakfast with some fresh fruit, or add a handful or two of chocolate chips to make them them more jazzy, if you like.
Banana oat bars

- 5 ripe bananas
- 300g oats
- 50g oat flour (make by blitzing oats in a blender until you're left with a flour-like consistency)
- 45ml milk (dairy or dairy-free)
- 3/4 tsp ground cinnamon
- 1 tsp nut butter/tahini or apple sauce
- Pinch of salt
Instructions
Begin by preheating the oven to 180c and greasing or lining a square or rectangle baking tin.
Next, in a bowl, mash 4 of the bananas and then combine with the oats, oat flour, milk, ground cinnamon, nut butter and salt.
Empty the mixture into the tin and flatten down. Slice the remaining banana and carefully push the slices into the mixture.
Bake in the oven for 25 minutes, allowing them to cool before slicing. Store in an airtight container and consume within 3 days.
