Chocolate chip cookies are all well and good, but sometimes, you just need something lemon-y with just the right balance of tartness and sweetness. Using chia seeds here mean these little biscuits are also vegan if you use a dairy-free yoghurt. Perfect for that mid-morning coffee accompaniment or 3pm lift!
Lemon and chia biscuits

- 1 lemon, zest and juice
- 25g chia seeds
- 90ml plain yoghurt (or dairy-free alternative)
- 50ml maple syrup
- 160g whole wheat flour
- 1 tsp baking powder
Instructions
Begin by pre-heating the oven to 180c and lining two baking trays with parchment paper.
In a bowl combine the flour, baking powder and chia seeds.
Next add the lemon juice and zest, yoghurt and maple syrup.
Combine until a ball of dough forms.
Sprinkle some flour on a work surface and using a rolling pin roll the mixture flat.
Cut out the biscuits with a small cookie cutter and place them on a baking tray.
Finish by baking them in the oven for 10-12 minutes. Leave to cool slightly before tucking in!
