I first shared the recipe to this delicious pizza, just in time for a Saturday night pizza party over Zoom, and it was so popular that we thought it best to share it here on the website, too.
We top ours here with a medley of veggies – courgette, pepper and red onion and topping with salty olives and peppery rocket just before tucking in. But, the best thing about making pizza at home? It’s free rein on the toppings (so nobody will know if you’re adding pineapple!)
This recipe makes enough for 2 pizzas so easy to scale up for bigger families or households.

- 170ml lukewarm water
- 1 sachet (7g) dried active yeast
- 250g strong white bread flour
- 1/2 tsp salt
- 1 tbsp extra virgin olive oil
- 1 red pepper, sliced
- 1 courgette, sliced
- 1 red onion, sliced
- 1 tsp of garlic granules or 2 cloves garlic, crushed
- 300ml passata
- 1 tsp oregano
- 3 handfuls grated cheese (dairy or dairy-free)
- Handful black olives, halved
- Handful fresh rocket
- Chilli flakes, optional
Begin by combining the lukewarm water and sachet of yeast together and leaving to sit for a few minutes.
Next, in a large bowl, combine the bread flour and salt. Make a well in the bowl and pour the lukewarm water and yeast mixture in. Combine until a ball of sticky dough is formed.
Sprinkle your work surface with some flour and knead the dough for 8 minutes before placing in a clean, lightly oiled bowl. Cover with a tea towel and put in a warm place to rise for 45 minutes.
Meanwhile, add the oil to a frying pan on a medium heat and add the red pepper, courgette and red onion. Combine with the garlic and cook for 5 minutes, until starting to soften. Leave to one side.
In a separate pan, on a medium heat, add the passata and oregano and heat through for a few minutes.
Once the dough is ready, punch the air out of it and place on a floured surface. At this point, preheat the oven to 180c.
Cut the dough into two and roll each piece out into your desired pizza shape using a rolling pin. Place them on baking trays, covering lightly with the passata, then sprinkling a handful of cheese on top of each.
Top with the veggies and then add the remaining cheese and sliced olives. Bake in the oven for 15 minutes before topping with some fresh rocket and chilli flakes, should you wish. Enjoy!
