This one we originally shared for Valentines day a few weeks ago, but it was a pretty popular recipe we thought we’d share it here on the website for you to come back to [once you’ve tried it and realised how easy and delicious it is, we reckon you’ll definitely be back!] Try it with a dollop of ice cream, or creamy coconut yoghurt for the ultimate dessert.
Chocolate mug cake

- 2 heaped tsp of cacao powder
- 20g dark chocolate, cut into chunks
- 6 tbsp milk or dairy free alternative
- 1 tbsp plain yoghurt or dairy free alternative
- 4 tbsp spelt flour
- 1/2 tsp baking powder
- 1 tsp light brown sugar
- 2 tsp smooth apple sauce
Instructions
Leaving a few chocolate chunks to one side, combine all of the ingredients in a large microwavable mug or ramekin and top with the remaining chocolate chunks.
Microwave in 30 second increments for approximately 2 minutes or until the middle is cooked through.
Leave to cool a little before ticking in!
[The cake will rise by nearly 1/3 in the microwave so ensure there is room to so do. If you only have small mugs, you can split the mixture between 2 mugs]
