This recipe was created in partnership with Pureology and inspired by the ingredients in their Hydrate Superfood Masque with a blend of citrus, pineapple and leafy greens. I hope this one brings a little more colour to your lunchbox and your week.
Tofu + pineapple poke bowlPrint This
- 1 tbsp soy sauce/tamari
- 1 tbsp sesame oil
- 1 garlic clove, crushed
- 1 block of extra firm tofu, cut into cubes
- Handful each of of kale, spinach and rocket leaves
- 200g pineapple chunks
- 380g brown rice, cooked
- 1 avocado
- 1/2 cucumber, sliced
- 9 radishes, sliced
- sesame seeds, to garnish
Preheat the oven to 180c and line a baking tray with parchment.
In a bowl, combine the soy sauce/tamari, sesame oil and garlic.
Add the tofu chunks and coat evenly, before placing them on the baking tray and pop into the oven for 20 minutes.
Massage the mixed leaves with a drizzle of oil, and the line the lunchboxes.
Add the roasted tofu, pineapple chunks, cooked rice, avocado, cucumber, and radishes.
Garnish with a sprinkle of sesame seeds.
