These quick easy banana and walnut muffins definitely make weekday breakfasts or mid morning snacks a little more delicious. I like mine with a flat white, or torn in half with almond butter spooned on top.
Banana + oat muffinsPrint This
- 180g whole oats
- 2 ripe medium-sized bananas, mashed
- 3 eggs/or chia eggs to make vegan
- 1-2 tsp cinnamon
- 1 tsp baking powder
- 1 tsp pure vanilla extract
- Handful of blueberries
- Handful of chopped walnuts
Preheat oven to 180c Degrees and grease a muffin tin.
Blend all the ingredients (except the blueberries + walnuts) in a food processor or with a hand blender until well combined. Then you can fold in blueberries and walnuts last.
Pour the mixture into the muffin tin and pop a walnut on top of each. Bake for 25-30 minutes until golden.
