Don’t save sausages just for mash! This traybake is one of those dishes that comes together with minimal effort but delivers maximum flavour. Use your favourite sausages thrown in a roasting tray with your favourite veggies and a few dollops of pesto and this can be your in 45 minutes.

- 6 dollops of green pesto*
- 180g baby potatoes
- 3 peppers
- 1 courgette
- 6 sausages (veggie or other)
- 2 red onion
- 6 handfuls of Spinach
- Olive oil
Preheat oven to 180C/350F.
Chop the veggies, scatter on a baking tray and drizzle with olive oil.
Add the sausages between the veg and add 6 spoonfuls of pesto. Give it all a good stir and place the tray in the oven for 40 minutes, until the sausages are cooked and the veggies are soft and roasted.
Add two handfuls of washed spinach into each lunchbox and separate the roasted veggies and sausages between the lunchboxes.
Keep in the fridge until ready to eat (lasts 3-4 days).
