These little bars make a wonderful little dessert, snack, or even breakfast enjoyed over yoghurt? Apple and blackberry is such a classic and delicious pairing that however you choose to enjoy them, you’ll love them I’m sure!
Apple + blackberry crumble bars

- FOR THE BASE...
- 120g oat flour (oats blitzed in food processor)
- 140g almond flour (almonds blitzed in food processor)
- 50ml coconut oil (melted) or any oil
- 80ml maple syrup
- FOR THE APPLE + BLACKBERRY LAYER...
- 150g apples (diced into small chunks)
- 100g blackberries (halved)
- 1⁄2 teaspoon of cinnamon
- 60ml maple syrup
- 1 tablespoon of arrowroot powder or corn starch
- FOR THE TOP...
- 100g (1/4) of your base layer
- 50g chopped walnuts
- 1⁄4 teaspoon of cinnamon
Instructions
Preheat oven to 180°C/350°F and grease a square baking tin.
In a bowl combine your base ingredients and pour 3/4 (approx. 300g) into the baking tin. Press down firmly and bake in the oven for approx. 15 minutes until it begins to brown around the edges of the tin. Leave aside to cool.
In another bowl, add your diced apples, blackberries, cinnamon and arrowroot powder/corn starch. Mix until well combined.
Then, in a saucepan over a medium heat, add your apple and blackberry mixture plus the maple syrup. Heat for about 6 minutes until the mixture thickens. Stir frequently.
Once you base layer has cooled, empty your apple and blackberry layer on top and spread over evenly.
In a mixing bowl add the remainder (1/4 approx. 100g) of the base layer plus your chopped walnuts and cinnamon and mixed until well combined.
Pour the top layer evenly on top of your apple and blackberry layer, pressing down gently to ensure it remains in place.
Bake for approx. 25 minutes before allowing to cool slightly, and then cut into (approx. 8) bars.
