These are so easy to make, all you need is a blender to whizz up the batter and ensure you get the most from the beautiful greens in the mix. And when I say the most I mean the beautiful bright green colour! (perfect for St Patrick’s day).

Green Crepes

- 80g buckwheat flour
- 1 large egg or 1 tbsp milled chia seed + 3 tbsp water (mix and set to one side for 5 minutes)
- 2 large handfuls of spinach
- ¼ tsp salt
- 1 tsp vanilla extract (optional if you want to go down the sweet topping route)
- 250ml milk of choice (dairy or plant-alternative)
Instructions
Blend together all ingredients in a high speed blender.
Set to one side for 10 to 15 minutes
Heat an 8 – 10 inch pan over a medium heat. Once the pan is hot lightly grease with oil (spray oil is really handy here)
Pour ¼ cup measures of the batter into the pan and swirl off the heat to ensure it spreads nicely
Lower the heat and cook for 1 -2 minutes. Flip and cook for 30 seconds approximately more
These crepes can be reheated, served cold or you can keep them warm in a really low oven
