Christmas dinner is one of my favourite meals, but I almost look forward to the leftovers even more – anyone else the same? If turkey sandwiches are not your thing, here is another way you can use your leftovers! This is a great recipe/dish to have in your back pocket when you’ve got a fridge of odd vegetables and not sure what to do with them.
Leftover veg one pan brunch

- 1 tbsp olive oil
- 2 cloves garlic, crushed
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1 handful of leftover cooked root veg- about 150g (parsnips, carrot, potatoes etc)
- 1 handful of greens of your choice- about 80g (leftovers work well here too, eg. brussel sprouts, kale, broccoli - just keep the weight roughly the same)
- 2 eggs
- 50g Feta cheese
- Coriander
Instructions
Head 1 tbsp olive oil in a frying pan and add the crushed garlic along with the spices, heating gently for about 1-2 minutes, stirring throughout. Then add all of your leftover veg & stir into the garlicky spices, for about 4 minutes until warmed through.
Make two holes in the mix and crack in your eggs to each one, sprinkling with a little sea salt & pepper. Cook the eggs until the whites have set, then sprinkle with the feta cheese & coriander.
