Occasionally having cake for breakfast is totally acceptable right? I certainly believe so. This one takes seconds to make and is absolutely delicious served hot with a dollop of thick coconut yogurt!
Chocolate & Peanut Butter MugcakePrint This
- 2 tbsp of a flour of choice
- 1 tbsp cocoa powder
- ¼ tsp baking powder
- 1 tbsp maple syrup
- ½ tsp vanilla essence
- 3 tbsp milk (or plant alternative)
- 1 tbsp peanut butter
Place all the ingredients in a mug or ramekin and stir until mixed well and a batter forms.
Place in the microwave for 1 minute (if it looks like it needs a bit longer, place it back in 10 seconds at a time until the mixture is cooked) OR cook in a 180c oven for about 12-15 minutes.
Best served with ice-cream or coconut yogurt and a few fresh berries, if you like!
