Cheese & Chive SconesPrint This
- 200g wholemeal flour
- 2 tsp baking powder
- Pinch of sugar
- ¼ tsp salt
- 50g butter, room temp
- 150ml milk or milk alternative
- 2 tbsp finely chopped fresh chives
- 1 tsp dried mixed herbs
- 100g cheddar, grated
Preheat oven to 200c. Dust a large baking tray with a sprinkle of flour.
Combine the dry ingredients in a large bowl.
Next Add the butter and rub it through using your hands until there are no large lumps remaining, and it resembles breadcrumbs.
Make a well in the centre and add the milk. Use your hands to bring together a soft mass of dough, without over handling.
Add the cheese and knead the dough gently to mix in the cheese
Lightly dust the worktop with flour, place the dough in the middle and flatten it to 1 inch thickness.
Using a cookie cutter, cut out into as many scones as possible (approx 8). Brush with a little milk and sprinkle any remaining cheese on top.
Bake in the pre-heated oven for 12 – 15 minutes depending on the size of the scones.
Allow to cool on the baking tray for about 10 minutes before transferring to a wire rack.
