Personally I love mushrooms but I know some people are yet to be convinced so hopefully this is the recipe that changes your mind! This plant based recipe is so delicious and relatively “meaty”, convincing even the most stubborn carnivores that plant based meals can actually be pretty delicious and super satisfying.
Mushroom Stroganoff

- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, grated
- 500g mushrooms, sliced
- 250g dairy or soya yogurt
- 1 tsp of dijon mustard
- 1 tsp paprika
- Handful of parsley
- Salt & pepper
- Wild rice, to serve
Instructions
- In a frying pan heat the olive oil and then add the onion and garlic, cook until they are soft and translucent.
- Add the mushrooms slowly and cook down for 5-10 minutes. Add the paprika, mustard and yogurt.
- Reduce the heat and simmer for 5 minutes.
- Add the parsley and seasoning and serve immediately with warm wild rice.
