With September just around the corner, I’m already thinking about “back to school” breakfasts, lunchbox ideas and easy dinners, to keep both you and I well fed on even the busiest of days! This recipe is perfect for those crazy mornings because you can prep the night before and grab and go in the AM with a mug of coffee. Try experimenting with the berries and maybe try adding some nuts and seeds? Have fun with it!
Blueberry Breakfast BarsPrint This
- 2 tbsp of butter or coconut oil, melted (plus extra to grease)
- 150g mashed banana (approx 2 small bananas)
- 250g porridge oats
- 150ml of milk (or plant alternative)
- 2 tbsp of maple syrup
- 1 tsp vanilla essence
- 150g frozen blueberries
- 1-2 tsp cinnamon
Preheat oven to 180c. Grease a 8-10” square baking tin with a little butter or coconut oil.
Add all of the ingredients together, folding in the blueberries last.
Pour the batter in to the greased baking tin and cook for 20-25 minutes until golden brown.
Allow to cool before slicing.
You can use fresh blueberries if you like and add in any nuts and/or seeds that you have to hand.
