In the spirit of Pancake day (or Shrove Tuesday as we call it back home!) and of course Valentine’s day, I wanted to share a pancake recipe that both feeds the soul and promotes heart health!
I used Linwoods milled flaxseed instead of an egg, which coincidentally makes this recipe vegan, but it also makes this recipe packed full of potential health benefits.
Flaxseed is one of the richest sources of the plant-based omega 3 fatty acid, alpha-linolenic acid (ALA) – an essential fatty acid which means it must be obtained by the diet as we can’t make it ourselves. Reducing the amount of saturated fat in your diet, and replaced it with monounsaturated fats (olive oil, nuts, avocados) and polyunsaturated fats (flaxseed, chia seed, oily fish) has been shown to improve your heart health by reducing your risk of heart disease and improving your cholesterol profile. Flaxseed is also an awesome source of fibre – the cool kid on the block these days! A diet high in fibre is also associated with a lower risk of heart disease, stroke, type 2 diabetes, and bowel cancer. For example, It has been shown that for every extra 7g/day of dietary fibre can reduce the risk of both cardiovascular disease and coronary heart disease by 9%. Considering CVD is one of the biggest causes of death in the UK, adding a little more fibre to your diet every day could potentially save lives!
- 80g of Wholemeal spelt flour**
- 20g of porridge oats
- 1 flax egg (1 TBSP linwoods milled flaxseed + 3 TBSP water)
- 1 TBSP of maple syrup/honey/sugar
- 150ml of oat milk***
- 1/2 tsp baking powder
- 1 tsp cinnamon (optional)
- 1 TBSP Coconut oil or mild olive oil to cook with
