I absolutely love these little snacks. They sort of taste like a cross between a ferrero rocher and an after eight – but they’re much easier, much cheaper, and far healthier for you! I take one or two with me to work to have on my coffee break. YUM!
Chocolate Mint Protein BallsPrint This
- 120g of almonds
- 1 TBSP cacao or cocoa powder
- 12 pitted dates*
- 2 TBSP peanut butter
- 2 TBSP honey or other syrup.
- 1/2 teaspoon of peppermint extract
- *Soak in hot water for 10 minutes, and drain before use.
Combine in a food processor for 1-2 minutes until it resembles a crumb-like consistency. It should be sticky enough to form into balls – if it’s too dry, add a dash of water.
Using your hands form 10-12 balls with the mixture.
Store in the fridge for 3-4 days in an airtight container
