Festive Pumpkin Pie OatmealPrint This
- 50g of porridge oats
- 100g of pumpkin puree*
- 175ml almond milk**
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon Mixed spice
- 1 TBSP of chopped pecans or walnuts
- 1 TBSP of dried cranberries
- Optional: 2 TBSP of protein power (vegan or whey)
Add the oats, pumpkin puree, almond milk, vanilla extract, cinnamon and mixed spice to a saucepan. Cook over a medium heat for 3-5 minutes until the mixture has absorbed the liquid. If you are using protein powder, add it next with an extra dash of almond milk.
Stir the cranberries and nuts into the oatmeal and transfer to a bowl for serving. Sprinkle extra nuts and cinnamon on top, and a drizzle of honey if your heart desires!
*Can be substituted with mashed sweet potato or butternut squash **Any milk or water may be used may be substituted if allergic or vegan.
