Dark Chocolate Coconut Flapjacks

- 1 cup of desiccated coconut
- 1 cup of oats
- 1 cup of ground almonds
- 2 eggs
- 1/4 cup of honey**
- 1/4 cup of melted coconut oil
- 1/2 tsp baking powder
- 2 TBSP cacao nibs
- 50g Dark Chocolate,chopped
Instructions
Preheat the oven to 190c
Combine the coconut, oats, ground almonds and baking power in a large mixing bowl. Stir the eggs, honey and melted coconut oil into the mixture, Finally fold in the cacao nibs and dark chocolate.
Grease or line a square baking tin and pour the mixture into the tray* Bake for 20 minutes until golden on top and allow to cool for a further 20 minutes before slicing and serving!
Notes
*silicone trays work best for this! **Any sweetener may be used may be substituted if allergic or vegan.
