Avocado Bake EggPrint This
- One avocado
- 2 eggs
- Salt and pepper
Preheat the oven to 200°c Slice the avocado in half, and take out the pit.
Spoon out some of the avocado flesh from the centre (roughly 2 tablespoons) so that the egg will fit without over pouring. Place the avocado halves on a baking tray
Slowly crack an egg into each avocado half. Place in the oven and bake for 15 to 20 minutes. Cooking time will depend on the size of your eggs and avocados. Just make sure the egg whites have enough time to set.
Remove from oven, then season with salt and pepper!
Try adding some bacon pieces to the egg before baking as an alternative to the plain version! Yum!
