The bread is more of a cake-like consistency and will appear very moist when first taken out of the oven! Once cool it will become less moist and easier to cut.
Sweet Potato BreadPrint This
- 2 cups of cold mashed sweet potato (approx. 4 small)
- ½ cup coconut flour
- 1 + 1/2 cup of oat flour*
- 1 tbsp organic honey (agave nectar or maple syrup if vegan)
- 3 large eggs (or 4 small)
- ½ tsp salt
- 1-2 tsp of paprika
Preheat your oven to 180°c
Put the ingredients into your food processor or blender and pulse until well combined. Spoon the mixture into a greased and lined, or silicone (this will prevent it sticking to the sides when you try to remove it), bread tin.
Bake for 45 minutes. Cover the loaf with foil and bake for a further 20-25 minutes.
Remove from the oven and allow to cool on a wire rack before slicing.
*Oat flour can be made by blending porridge oats. The ingredients measure is for the amount of oat flour, not whole oats.
