Gluten Free Banana Bread

- 3 Ripe bananas
- 1/3 cup coconut flour
- 1 whole egg
- 4 egg whites
- 1 TBSP of ground flaxseed
- 1TBSP of organic honey (agave nectar or maple syrup if vegan)
- 1 tsp of baking powder
- 1 tsp of vanilla extract
- 1-2 tsbp of cinnamon
- Optional: Walnuts, Chocolate chips, Raisins.
Instructions
Preheat the oven to 180°c. Grease a bread tin with coconut oil or butter, or use a silicone bread tray.
Mash the bananas, add the eggs, honey, and vanilla extract. Mix well with a spoon or using a hand held blender.
add the baking powder, flaxseed, cinnamon and coconut flour to the mix. Allow sit for 2 minutes before transferring to the baking tray (this will allow the coconut flour to absorb the liquid)
stir in any extra ingredients and transfer to the baking tin.
Bake for 40-50 minutes or until golden brown. Stick a knife or toothpick in to check if it is cooked all the way through, it should feel moist but the knife should come out clean.
Allow cool fully and slice.
